A refreshing, crowd-pleasing pasta salad with tomatoes, olives, mozzarella, and a tangy homemade Italian dressing. Perfect for potlucks!

Ingredients
  

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, sliced
  • 1/2 cup black olives
  • 1/2 cup pepperoni (optional)
  • 1/2 cup mozzarella pearls
  • 1/4 cup fresh basil
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt & pepper

Instructions
 

  • Cook pasta al dente, drain, and rinse under cold water
  • Chop all veggies and combine in a large bowl
  • Whisk dressing ingredients in a separate jar.
  • Toss pasta, veggies, cheese, and dressing together.
  • Chill for 1+ hour before serving.
