- 12 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, sliced
- 1/2 cup black olives
- 1/2 cup pepperoni (optional)
- 1/2 cup mozzarella pearls
- 1/4 cup fresh basil
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 garlic clove, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt & pepper
Cook pasta al dente, drain, and rinse under cold water
Chop all veggies and combine in a large bowl
Whisk dressing ingredients in a separate jar.
Toss pasta, veggies, cheese, and dressing together.
Chill for 1+ hour before serving.
