Instructions
Season the tilapia fillets lightly with salt and pepper.
In a large skillet, heat olive oil over medium heat and sear the tilapia for about 3-4 minutes on each side until just opaque and easily flakes apart.
Remove the tilapia from the skillet and set aside. In the same skillet, add the chopped onion and minced garlic, cooking until softened.
Add the roasted peppers and cook for another 5 minutes, allowing them to soften and sweeten.
Blend the pepper mixture until smooth, adding vegetable stock to reach desired consistency.
Return the tilapia to the sauce in the skillet for a couple of minutes, allowing the flavors to meld.
If using, whisk in the cream and adjust seasoning before serving.
Notes
Tip: Using a mix of pepper colors makes for a visually appealing dish. Also, serve with grains or crusty bread to soak up the sauce!
