  • 500 g Tilapia fillets fresh or thawed, pat dry before cooking
  • 300 g Roasted peppers variety of colors for sweetness
  • 15 ml Olive oil for cooking and blending
  • 2 cloves Garlic minced
  • 1 medium Onion chopped
  • 50 ml Vegetable stock for thinning sauce, optional
  • 50 ml Cream optional, for richness
  • to taste Salt for seasoning
  • to taste Pepper for seasoning

Instructions
 

  • Season the tilapia fillets lightly with salt and pepper.
  • In a large skillet, heat olive oil over medium heat and sear the tilapia for about 3-4 minutes on each side until just opaque and easily flakes apart.
  • Remove the tilapia from the skillet and set aside. In the same skillet, add the chopped onion and minced garlic, cooking until softened.
  • Add the roasted peppers and cook for another 5 minutes, allowing them to soften and sweeten.
  • Blend the pepper mixture until smooth, adding vegetable stock to reach desired consistency.
  • Return the tilapia to the sauce in the skillet for a couple of minutes, allowing the flavors to meld.
  • If using, whisk in the cream and adjust seasoning before serving.

Notes

Tip: Using a mix of pepper colors makes for a visually appealing dish. Also, serve with grains or crusty bread to soak up the sauce!
