  • 100 g Butter melted
  • 500 g Cream cheese softened
  • 150 g Sugar
  • 3 Eggs large
  • 200 g Dark chocolate melted
  • 1 ml Vanilla extract
  • 300 g Cherries pitted and chopped
  • 1 g Cornstarch optional

Instructions
 

  • Start with a sturdy crust by mixing your chosen crumbs with a bit of butter and a pinch of salt, then press firmly into your pan.
  • Bake briefly just to set the crust’s edges, then let it cool while you prepare the filling.
  • For the filling, beat cream cheese until smooth, then gradually add sugar, vanilla, and eggs, one at a time, until fully mixed.
  • Fold in melted dark chocolate until the batter looks shiny, and swirl in a little cherry component if you like.
  • Pour onto the crust and bake until the center has a slight jiggle; remember, it will firm up as it cools.
  • Let the cake cool at room temperature, then chill thoroughly in the fridge before slicing.
  • A light garnish of chocolate shavings and fresh cherries makes it look even more appealing.

Notes

Tip: Don't overmix the batter to avoid a dense result, and chill the crust well for easier slicing.
