  • 500 g All-purpose flour for brioche dough
  • 70 g Sugar for brioche dough and custard
  • 10 g Yeast active dry yeast
  • 5 g Salt for brioche dough
  • 3 large Eggs for brioche dough and custard
  • 200 ml Milk for custard
  • 100 g Butter softened, for brioche dough
  • 1 tsp Vanilla extract for custard
  • 100 g Chocolate chips for filling

Instructions
 

  • In a mixing bowl, combine flour, sugar, yeast, and salt.
  • Add eggs and softened butter, then mix until a dough forms.
  • Knead the dough until smooth; let it rest for about 1 hour until doubled in size.
  • In another pot, heat milk with vanilla. Whisk eggs and remaining sugar in a bowl until pale.
  • Gradually mix hot milk into the egg mixture, then return to the pot and cook until thickened.
  • Divide the risen dough into portions. Create pockets, fill with custard and chocolate chips, then seal.
  • Let filled dough rise for another 30 minutes, then bake at 180°C for 20-25 minutes until golden.

Notes

Tip: Make sure to seal the pastries well to prevent leaking custard during baking.
