  • 500 g Chicken tenders skinless and boneless
  • 100 g Unsweetened shredded coconut
  • 2 large Eggs or dairy-free alternative
  • 50 g Gluten-free breadcrumbs optional for extra crunch
  • 1 tsp Salt adjust to taste
  • 1 tsp Paprika or garlic powder

Instructions
 

  • Preheat the air fryer to 200°C and pat chicken tenders dry.
  • Dip each chicken tender in eggs, then coat with shredded coconut (and breadcrumbs if using), pressing gently to secure the coating.
  • Arrange tenders in a single layer in the air fryer basket, making sure they are not overcrowded.
  • Cook for about 12-15 minutes, flipping halfway through, until golden brown and cooked through, with an internal temperature of 74°C.
  • Let the tenders rest for a couple of minutes to maintain moisture and crispness.

Notes

Tip: For extra crispiness, chill the coated tenders for 15 minutes before cooking.
