Instructions
Preheat the air fryer to 200°C and pat chicken tenders dry.
Dip each chicken tender in eggs, then coat with shredded coconut (and breadcrumbs if using), pressing gently to secure the coating.
Arrange tenders in a single layer in the air fryer basket, making sure they are not overcrowded.
Cook for about 12-15 minutes, flipping halfway through, until golden brown and cooked through, with an internal temperature of 74°C.
Let the tenders rest for a couple of minutes to maintain moisture and crispness.
Notes
Tip: For extra crispiness, chill the coated tenders for 15 minutes before cooking.
