  • 4 large Eggs
  • 100 g All-purpose flour
  • 50 g Unsweetened cocoa powder
  • 200 g Granulated sugar
  • 1 pinch Salt
  • 250 g Fresh raspberries
  • 200 g White chocolate
  • 250 ml Heavy cream
  • 1 tablespoon Powdered sugar for garnish

Instructions
 

  • Preheat your oven to 175°C and line a jelly roll pan with parchment paper.
  • In a mixing bowl, whisk the eggs and sugar until they’re light and fluffy, about 5 minutes.
  • Gently fold in the flour and cocoa powder to keep that airy texture.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for 12-15 minutes, or until the cake springs back when touched.
  • Once baked, transfer it to a clean kitchen towel dusted with powdered sugar and roll it up to cool.
  • After about 30 minutes, unroll and spread your white chocolate raspberry filling, then carefully re-roll for a stunning presentation.

Notes

Tip: Keep an eye on baking time! Overbaking can lead to a dry cake. If your cake cracks, just place the cracked side down on your serving platter, and you can easily cover it with frosting or berries.
