garlic powder
Salt and pepper to taste

Instructions
Heat oil in large non-stick skillet over medium heat. Add diced potatoes and cook for 8 minutes, stirring occasionally, until golden and tender.
Season potatoes with salt, pepper, and garlic powder.
Push potatoes to one side of skillet. Pour beaten eggs into empty space and let set for 30 seconds before scrambling.
Gently mix eggs and potatoes together. Sprinkle cheese on top and cover for 1 minute to melt.
Remove from heat, garnish with chives if desired, and serve immediately.
Notes
For extra crispiness, parboil potatoes for 3 minutes before frying. Add diced bell peppers or cooked bacon for more flavor variations.
