Easy Cheesy Potato Egg Scramble

Ingredients
  

  • 2 medium russet potatoes (diced small)
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil or butter
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoon chopped chives or green onions Optional

Instructions
 

  • Heat oil in large non-stick skillet over medium heat. Add diced potatoes and cook for 8 minutes, stirring occasionally, until golden and tender.
  • Season potatoes with salt, pepper, and garlic powder.
  • Push potatoes to one side of skillet. Pour beaten eggs into empty space and let set for 30 seconds before scrambling.
  • Gently mix eggs and potatoes together. Sprinkle cheese on top and cover for 1 minute to melt.
  • Remove from heat, garnish with chives if desired, and serve immediately.

Notes

For extra crispiness, parboil potatoes for 3 minutes before frying. Add diced bell peppers or cooked bacon for more flavor variations.
