Instructions
Preheat your air fryer to moderate temperature.
In a bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt until combined.
In another bowl, whisk the wet ingredients: eggs, dairy, melted butter, lemon juice, and lemon zest.
Gently fold the wet ingredients into the dry mix just until combined—avoid overmixing.
Lightly grease your loaf pan and pour in the batter, smoothing the top.
Place the pan into the air fryer basket and bake for about 18-25 minutes.
Check for doneness using a toothpick; it should come out with a few moist crumbs.
Let the bread rest for at least 10 minutes before slicing.
