  • 1000 g Chicken cut into pieces
  • 800 g Tomatoes blended
  • 300 g Red bell peppers blended
  • 200 g Onion chopped
  • 6 g Garlic minced
  • 15 g Ginger minced
  • 10 g Thyme
  • 5 g Curry powder
  • 5 g Salt
  • 5 g Pepper
  • 30 ml Cooking oil
  • 500 ml Water or chicken broth

Instructions
 

  • In a large pot, heat some cooking oil over medium heat and sauté the chopped onions until they become glossy.
  • Add minced garlic and ginger, stirring for about a minute to release their aromas.
  • Pour in the blended tomatoes and bell peppers, then cook until the mixture reduces and thickens.
  • Stir in thyme, curry powder, salt, and pepper. Let it simmer for another 10 minutes.
  • Add the chicken pieces and enough water or broth to barely cover them. Cook until the chicken is fully cooked through and tender.
  • Taste, adjust the seasoning, and let it simmer for a final five minutes before serving.

Tip: Avoid skimping on seasoning and don't rush the cooking process to ensure that your stew is flavorful and rich.
