Instructions
In a large pot, heat some cooking oil over medium heat and sauté the chopped onions until they become glossy.
Add minced garlic and ginger, stirring for about a minute to release their aromas.
Pour in the blended tomatoes and bell peppers, then cook until the mixture reduces and thickens.
Stir in thyme, curry powder, salt, and pepper. Let it simmer for another 10 minutes.
Add the chicken pieces and enough water or broth to barely cover them. Cook until the chicken is fully cooked through and tender.
Taste, adjust the seasoning, and let it simmer for a final five minutes before serving.
