Ingredients
  

Pie Base

  • 1 9-inch pie shell homemade or store-bought

Vegetables

  • 3 cups chopped tomatoes drained and squeezed
  • 1/2 cup chopped onion yellow or red onion
  • 1/4 cup fresh basil thinly sliced

Cheese Mixture

  • 2 cups shredded cheese cheddar and Monterey Jack
  • 1/2 cup mayonnaise
  • 1 teaspoon hot sauce such as Frank’s or Tabasco
  • kosher salt and black pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C). Place rack in center.
  • Pre-bake pie crust for 10 minutes or until lightly golden. Let cool slightly.
  • Halve and squeeze tomatoes to remove excess liquid. Chop and salt. Let drain in colander.
  • Spread chopped onion in the cooled pie crust. Layer with drained tomatoes and sprinkle basil over.
  • Mix shredded cheese, mayo, hot sauce, and pepper in a bowl. Spread mixture evenly over tomatoes.
  • Bake for 25–45 minutes until golden brown and bubbly. Let sit before slicing.

Notes

Make sure tomatoes are well-drained to prevent a soggy pie. Use a mix of cheeses for best flavor.
