  • 500 g Ground pork fresh, with some fat for tenderness
  • 100 g Breadcrumbs regular or panko
  • 1 piece Onion finely chopped
  • 2 cloves Garlic minced
  • 1 bunch Cilantro chopped
  • 1 piece Lime zested and juiced
  • 10 g Chili powder
  • 5 g Cumin
  • 5 g Paprika
  • 5 g Oregano
  • 1 piece Egg large
  • 50 g Cheese grated, for richness
  • 1 piece Jalapeño finely chopped, optional

Instructions
 

  • Preheat your oven to 180–200°C (350–400°F).
  • In a large mixing bowl, gently combine ground pork, breadcrumbs, onion, garlic, cilantro, lime zest, eggs, cheese, and spices until just mixed. Avoid overworking the mixture.
  • If using, finely chop the jalapeños and fold them into the mixture.
  • Moisten your hands and shape the mixture into walnut-sized balls, placing them on a parchment-lined baking sheet.
  • Bake in the preheated oven for about 20–25 minutes, turning halfway through, until golden brown and cooked through.
  • Let the donkey balls rest for a few minutes to keep the juices inside, then serve!

Notes

For excellent results, pair these meatballs with warm tortillas, lime wedges, and a tangy dipping sauce like chipotle mayo or avocado crema.
