Instructions
Preheat your oven to 180–200°C (350–400°F).
In a large mixing bowl, gently combine ground pork, breadcrumbs, onion, garlic, cilantro, lime zest, eggs, cheese, and spices until just mixed. Avoid overworking the mixture.
If using, finely chop the jalapeños and fold them into the mixture.
Moisten your hands and shape the mixture into walnut-sized balls, placing them on a parchment-lined baking sheet.
Bake in the preheated oven for about 20–25 minutes, turning halfway through, until golden brown and cooked through.
Let the donkey balls rest for a few minutes to keep the juices inside, then serve!
