  • 1 lb breakfast sausage regular or hot, cooked and crumbled
  • 30 oz frozen tater tots
  • 2 cups shredded Mexican blend cheese divided (or cheddar)
  • 8 eggs large
  • 1 cup milk whole milk recommended

Seasonings

  • 1 tsp kosher salt
  • 0.5 tsp black pepper freshly ground
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  • In a large skillet, cook sausage over medium-high heat until browned and crumbled. Drain excess grease.
  • Spread frozen tater tots evenly in the baking dish. Top with cooked sausage and 1½ cups cheese. Gently toss to combine.
  • In a medium bowl, whisk eggs, milk, salt, pepper, garlic powder, and onion powder. Pour evenly over the tater tot mixture.
  • Sprinkle remaining ½ cup cheese on top. Bake for 55-60 minutes until golden and eggs are set.
  • Let rest for 5 minutes before slicing. Serve warm with hot sauce or sour cream!
