  • 8 spring roll wrappers
  • 450 g fresh salmon fillet cut into pieces
  • 250 g cooked rice noodles
  • 100 g shredded lettuce
  • 50 g grated carrots
  • 30 g fresh herbs mint, cilantro, basil
  • 5 g salt to taste
  • 5 g pepper to taste
  • 30 ml soy sauce
  • 15 ml lime juice
  • 15 g honey
  • 5 g minced garlic
  • 5 g grated ginger

Instructions
 

  • Combine soy sauce, lime juice, honey, minced garlic, and grated ginger in a bowl to create the marinade. Let the salmon marinate for at least 30 minutes.
  • Preheat the oven to 190 °C.
  • Wrap the marinated salmon and vegetables in the spring roll wrappers and place them on a baking sheet lined with parchment paper.
  • Brush lightly with oil and bake for 15-20 minutes until golden brown.

Notes

Tip: Serve with a side of peanut sauce or sweet chili sauce for extra flavor.
